Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup warm milk
  • 4 large eggs
  • 1/2 cup unsalted butter
  • 1 egg for egg wash
  • to taste sesame seeds or poppy seeds

Instructions

  1. In a small bowl, combine the warm milk and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the flour, sugar, and salt.
  3. Make a well in the center of the dry ingredients and add the frothy yeast mixture, 4 eggs, and softened butter.
  4. Mix with a spatula or wooden spoon until the dough begins to pull away from the sides of the bowl.
  5. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
  6. Place the kneaded dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
  7. Once risen, punch down the dough gently to release air bubbles. Divide the dough into 12 equal pieces and shape them into balls.
  8. Place the dough balls on a parchment-lined baking sheet, leaving space between each.
  9. Cover the buns with a clean kitchen towel and let them rise again for about 30-45 minutes, until they puff up.
  10. Preheat your oven to 375°F (190°C).
  11. Beat the remaining egg in a small bowl and brush the tops of the buns with the egg wash. Sprinkle with sesame or poppy seeds if desired.
  12. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  13. Remove from the oven and allow to cool on a wire rack before serving.

For a richer flavor, use high-quality butter.
