Easy Bruschetta Chicken Recipe for Quick Dinner
Ingredients
- 4 pieces boneless, skinless chicken breasts
- 2 cups cherry tomatoes, diced
- 1 cup fresh mozzarella, diced
- 0.5 cup fresh basil leaves, chopped
- 3 cloves garlic, minced
- 3 tablespoons balsamic glaze
- 3 tablespoons olive oil

- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the diced cherry tomatoes, mozzarella, chopped basil, minced garlic, balsamic glaze, 1 tablespoon of olive oil, salt, pepper, and Italian seasoning. Stir well to mix the ingredients evenly and set aside.
- Season the chicken breasts with the remaining olive oil, salt, and pepper on both sides.
- In a large oven-safe skillet over medium-high heat, sear the chicken breasts for about 4-5 minutes on each side until they are golden brown.
- Once seared, remove the skillet from the heat and spoon the tomato and mozzarella mixture generously over each chicken breast.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is melted and bubbly.
- Remove from the oven and let it rest for 5 minutes before slicing to serve.
