Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, diced
  • 1 cup fresh mozzarella, diced
  • 0.5 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons balsamic glaze
  • 3 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the diced cherry tomatoes, mozzarella, chopped basil, minced garlic, balsamic glaze, 1 tablespoon of olive oil, salt, pepper, and Italian seasoning. Stir well to mix the ingredients evenly and set aside.
  3. Season the chicken breasts with the remaining olive oil, salt, and pepper on both sides.
  4. In a large oven-safe skillet over medium-high heat, sear the chicken breasts for about 4-5 minutes on each side until they are golden brown.
  5. Once seared, remove the skillet from the heat and spoon the tomato and mozzarella mixture generously over each chicken breast.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for 5 minutes before slicing to serve.

💡 Chef's Notes

Serve the bruschetta chicken on a wooden cutting board or a white platter for contrast, garnished with extra basil leaves and a drizzle of balsamic glaze. Pair it with a side of garlic bread or a fresh green salad for a complete meal.
