Easy Chicken Quesadillas Quick and Flavorful Recipe
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 whole green bell pepper, diced
- 1 small red onion, finely chopped
- 1 teaspoon taco seasoning
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1 serving sour cream, for serving
- 1 serving salsa, for serving
- 1 serving fresh cilantro, for garnish
Instructions
- In a large mixing bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, diced bell pepper, red onion, and taco seasoning. Mix well until all ingredients are evenly incorporated.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet and spread half of the chicken and cheese mixture evenly over one half of the tortilla.
- Fold the tortilla in half and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.
- Remove the quesadilla from the skillet and let it rest for a minute before cutting it into wedges.
- Repeat the process with the remaining tortillas and filling, adding more oil to the skillet as needed.
- Serve warm with sour cream, salsa, and a sprinkle of fresh cilantro on top for garnish.
