Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 whole green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 teaspoon taco seasoning
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 serving sour cream, for serving
  • 1 serving salsa, for serving
  • 1 serving fresh cilantro, for garnish

Instructions

  1. In a large mixing bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, diced bell pepper, red onion, and taco seasoning. Mix well until all ingredients are evenly incorporated.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Place one tortilla in the skillet and spread half of the chicken and cheese mixture evenly over one half of the tortilla.
  4. Fold the tortilla in half and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.
  5. Remove the quesadilla from the skillet and let it rest for a minute before cutting it into wedges.
  6. Repeat the process with the remaining tortillas and filling, adding more oil to the skillet as needed.
  7. Serve warm with sour cream, salsa, and a sprinkle of fresh cilantro on top for garnish.
