Easy Cinnamon Sugar French Toast Muffins Delight
Ingredients
- 6 slices bread (preferably challah or brioche)
- 3 large eggs
- 1 cup milk
- 1 quarter cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 quarter teaspoon nutmeg
- 1 quarter cup melted butter
- 1 half cup brown sugar (for topping)
- 1 tablespoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.
- Cut the bread into small cubes and place them in a large mixing bowl.
- In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and nutmeg until well combined.
- Pour the egg mixture over the bread cubes and gently fold until all the bread pieces are soaked. Let it sit for about 10 minutes to absorb the liquid.
- In a separate small bowl, combine the melted butter, brown sugar, and the additional tablespoon of ground cinnamon to create a crumbly topping.
- Scoop the soaked bread mixture into the prepared muffin tin, filling each cavity about 3/4 full.
- Sprinkle a generous amount of the cinnamon-sugar topping over each muffin.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are golden and puffed.
- Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
