Ingredients

  • 6 slices bread (preferably challah or brioche)
  • 3 large eggs
  • 1 cup milk
  • 1 quarter cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 quarter teaspoon nutmeg
  • 1 quarter cup melted butter
  • 1 half cup brown sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.
  2. Cut the bread into small cubes and place them in a large mixing bowl.
  3. In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and nutmeg until well combined.
  4. Pour the egg mixture over the bread cubes and gently fold until all the bread pieces are soaked. Let it sit for about 10 minutes to absorb the liquid.
  5. In a separate small bowl, combine the melted butter, brown sugar, and the additional tablespoon of ground cinnamon to create a crumbly topping.
  6. Scoop the soaked bread mixture into the prepared muffin tin, filling each cavity about 3/4 full.
  7. Sprinkle a generous amount of the cinnamon-sugar topping over each muffin.
  8. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden and puffed.
  9. Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Serve warm with a dusting of powdered sugar and a drizzle of maple syrup for extra sweetness. Enjoy with fresh fruit!
