Ingredients

  • 4 pieces chicken breasts, boneless and skinless
  • 0.5 cup unsalted butter, melted
  • 2 tablespoons garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried oregano
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • as needed fresh lemon wedges, for serving

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a medium bowl, combine the melted butter, minced garlic, parsley, smoked paprika, oregano, brown sugar, chili powder, salt, and pepper. Mix until well combined.
  3. Take each chicken breast and generously coat it with the cowboy butter mixture, reserving some for basting while cooking.
  4. Place the coated chicken breasts on the hot grill and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  5. While grilling, baste the chicken with the reserved cowboy butter mixture to enhance flavor and keep it moist.
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  7. Serve the chicken with fresh lemon wedges on the side for added brightness.
