Ingredients

  • 3 large egg whites
  • 0.25 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon Jello powder (any flavor)
  • a pinch salt
  • Sprinkles for decoration (optional)

Instructions

  1. Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, using an electric mixer, beat the egg whites and cream of tartar on medium speed until foamy.
  3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form. This should take about 6-8 minutes.
  4. Add the vanilla extract and Jello powder to the meringue mixture. Beat for another minute just until fully incorporated and the mixture is glossy.
  5. Using a piping bag or a spoon, drop dollops or pipe swirls of meringue onto the prepared baking sheet, leaving some space between each cookie.
  6. If desired, sprinkle colorful sprinkles on top of each meringue before baking for an extra pop of color.
  7. Bake the cookies in the preheated oven for 1.5 to 2 hours, or until they are dry to the touch and can be lifted off the parchment paper easily.
  8. Turn off the oven and leave the cookies inside with the door slightly ajar for an additional hour to fully dry and harden.
  9. Once cooled, enjoy your delightful Jello meringue cookies with a cup of tea or coffee.
