Ingredients
- 3 large egg whites
- 0.25 teaspoon cream of tartar
- 1 cup granulated sugar
- 0.5 teaspoon vanilla extract
- 1 tablespoon Jello powder (any flavor)
- a pinch salt
- Sprinkles for decoration (optional)
Instructions
- Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, using an electric mixer, beat the egg whites and cream of tartar on medium speed until foamy.
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form. This should take about 6-8 minutes.
- Add the vanilla extract and Jello powder to the meringue mixture. Beat for another minute just until fully incorporated and the mixture is glossy.
- Using a piping bag or a spoon, drop dollops or pipe swirls of meringue onto the prepared baking sheet, leaving some space between each cookie.
- If desired, sprinkle colorful sprinkles on top of each meringue before baking for an extra pop of color.
- Bake the cookies in the preheated oven for 1.5 to 2 hours, or until they are dry to the touch and can be lifted off the parchment paper easily.
- Turn off the oven and leave the cookies inside with the door slightly ajar for an additional hour to fully dry and harden.
- Once cooled, enjoy your delightful Jello meringue cookies with a cup of tea or coffee.
