Easy Lasagna Soup Quick and Flavorful Meal Recipe
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound ground beef or Italian sausage
- 28 ounces crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 0.5 teaspoon red pepper flakes (optional)
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese

Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes, until softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef (or sausage) to the pot, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- Pour in the crushed tomatoes, chicken or vegetable broth, oregano, basil, and red pepper flakes (if using). Stir to combine, and bring the mixture to a simmer.
- Add the broken pieces of lasagna noodles to the pot and cook until they are al dente according to package instructions, usually about 8-10 minutes.
- Once the noodles are cooked, reduce the heat to low. Stir in the ricotta cheese until well mixed, and allow the soup to heat through. Season with salt and pepper to taste.
- To serve, ladle the soup into bowls, and top each portion with shredded mozzarella and a sprinkle of Parmesan cheese. Garnish with fresh basil or parsley.
