Ingredients

  • 8 oz block of feta cheese or mozzarella balls
  • 0.5 cup extra virgin olive oil
  • 2 cloves garlic, crushed
  • 1 teaspoon red pepper flakes
  • 1 tablespoon dried oregano
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried
  • 1 zest of lemon
  • to taste salt and pepper
  • for garnish fresh basil leaves

Instructions

  1. In a small mixing bowl, combine the extra virgin olive oil, crushed garlic, red pepper flakes, dried oregano, thyme, lemon zest, salt, and pepper. Whisk the ingredients together until well combined.
  2. Place the block of feta cheese or mozzarella balls in a glass jar or an airtight container.
  3. Pour the marinade over the cheese, ensuring that it's well coated. If using a block of cheese, press down to submerge it partially in the oil.
  4. Seal the jar or container tightly and refrigerate for at least 2 hours or overnight for optimal flavor infusion.
  5. When ready to serve, remove the cheese from the fridge and let it sit for about 15 minutes at room temperature.
  6. Transfer the marinated cheese to a serving platter, drizzling some of the marinade over the top. Garnish with fresh basil leaves.
  7. Serve with crusty bread, crackers, or fresh vegetables for dipping.
