Ingredients

  • 4 pieces ripe tomatoes, diced
  • 200 g feta cheese, crumbled
  • 1 small red onion, thinly sliced
  • 1 piece cucumber, diced
  • 1 piece bell pepper (red or yellow), chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano

  • for garnish fresh basil leaves

Instructions

  1. In a large mixing bowl, combine the diced tomatoes, cucumber, bell pepper, and red onion.
  2. Gently fold in the crumbled feta cheese, ensuring not to break it too much.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
  4. Pour the dressing over the salad ingredients and gently toss to coat all the veggies and feta evenly.
  5. Allow the salad to sit at room temperature for about 10 minutes to let the flavors meld.
  6. Before serving, top the salad with fresh basil leaves for a fragrant finish.
