- 1 small onion, finely chopped

- 0.5 cup ricotta cheese
- 0.5 cup mozzarella cheese, shredded

- 0.25 cup gorgonzola cheese, crumbled
- 0.25 cup fontina cheese, shredded

Instructions
- In a large skillet or saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes, or until the onion is translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Pour in the crushed tomatoes and tomato sauce. Stir well to combine.
- Season the mixture with oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer and let it cook for 15-20 minutes to allow the flavors to meld, stirring occasionally.
- Once the sauce thickens and is fragrant, reduce the heat to low.
- Stir in the ricotta cheese until fully incorporated, creating a creamy base.
- Add the mozzarella, parmesan, gorgonzola, and fontina cheeses to the sauce. Stir continuously until all the cheeses are melted and the sauce is smooth and bubbling.
- Taste and adjust seasoning if necessary, adding more salt or red pepper flakes depending on your preference.
- Remove the sauce from heat and let it cool for a few minutes before serving.
