Ingredients

  • 2 pieces chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 piece avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, diced
  • 0.5 cup fresh cilantro, chopped
  • 1 piece Juice of lime
  • 0.5 cup Greek yogurt or sour cream (for topping)
  • optional shredded cheese
  • optional tortilla chips for crunch

Instructions

  1. In a large bowl, combine diced chicken, olive oil, paprika, cumin, garlic powder, chili powder, salt, and pepper. Mix until the chicken is evenly coated with the spices.
  2. In a skillet over medium heat, add the seasoned chicken. Cook for about 7-10 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink. Remove from heat.
  3. In serving bowls, layer the ingredients starting with a base of cooked brown rice.
  4. Top the rice with cooked chicken, black beans, corn, avocado slices, cherry tomatoes, and diced red onion.
  5. Sprinkle fresh cilantro over the top and drizzle lime juice for added zing.
  6. For a creamy finish, add a dollop of Greek yogurt or sour cream to each bowl. If desired, sprinkle shredded cheese or crushed tortilla chips for an extra crunch.
  7. Serve immediately and enjoy your flavorful fiesta!
