Ingredients
- 2 pieces chicken breasts, diced
- 1 tablespoon olive oil

- 1 teaspoon cumin

- 1 cup cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 piece avocado, sliced
- 1 cup cherry tomatoes, halved
- 0.5 cup red onion, diced
- 0.5 cup fresh cilantro, chopped
- 1 piece Juice of lime
- 0.5 cup Greek yogurt or sour cream (for topping)

Instructions
- In a large bowl, combine diced chicken, olive oil, paprika, cumin, garlic powder, chili powder, salt, and pepper. Mix until the chicken is evenly coated with the spices.
- In a skillet over medium heat, add the seasoned chicken. Cook for about 7-10 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink. Remove from heat.
- In serving bowls, layer the ingredients starting with a base of cooked brown rice.
- Top the rice with cooked chicken, black beans, corn, avocado slices, cherry tomatoes, and diced red onion.
- Sprinkle fresh cilantro over the top and drizzle lime juice for added zing.
