Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1 4 cup almond flour
  • 1 teaspoon baking powder
  • 1 2 teaspoon salt
  • 1 teaspoon garlic powder (optional, for flavor)
  • 1 teaspoon dried oregano (optional, for flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese and eggs. Blend with a hand mixer or food processor until smooth and creamy.
  3. In a separate bowl, mix together the almond flour, baking powder, salt, and optional garlic powder and oregano.
  4. Gradually fold the dry ingredients into the cottage cheese mixture, stirring gently until well incorporated. Be careful not to overmix, as you want to keep the batter light and airy.
  5. Using a spoon or ice cream scoop, dollop the batter onto the prepared baking sheet, forming 6-8 cloud-like mounds.
  6. Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and spring back when lightly touched.
  7. Remove from the oven and let cool on a wire rack for about 5 minutes before serving.
