Ingredients

  • 4 cups fresh peaches, peeled and sliced
  • 0.5 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup milk
  • 0.5 cup unsalted butter, melted
  • 0.25 teaspoon nutmeg (optional)
  • 1 serving vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches with granulated sugar, lemon juice, vanilla extract, and cinnamon. Stir gently to coat the peaches, then set aside to let the juices seep in for about 10 minutes.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, salt, and nutmeg (if using).
  4. Slowly pour in the milk and melted butter, stirring until just combined; be careful not to overmix. The batter will be somewhat lumpy—that’s okay!
  5. In a large cast-iron skillet (or another oven-safe skillet), pour the peach mixture evenly over the bottom.
  6. Carefully spoon the batter over the peaches. Do not stir; it’s fine if some peaches peek through.
  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Once baked, remove from the oven and let it cool for a few minutes before serving.
