Ingredients

  • 4 medium ripe tomatoes, diced
  • 0.5 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • to taste salt and pepper
  • 1 loaf French baguette or ciabatta, sliced
  • 0.25 cup crumbled feta cheese (optional)

Instructions

  1. In a mixing bowl, combine the diced tomatoes, chopped basil, and minced garlic.
  2. Drizzle in the balsamic vinegar and olive oil. Toss gently until all the ingredients are well combined.
  3. Season with salt and pepper to taste. Let the mixture sit for about 10-15 minutes to allow the flavors to meld together.
  4. While the tomato mixture is resting, preheat your oven to 400°F (200°C).
  5. Arrange the sliced baguette or ciabatta on a baking sheet. Brush each slice lightly with olive oil.
  6. Bake the bread in the preheated oven for about 5-7 minutes, or until golden and crisp.
  7. Remove the bread from the oven and let it cool slightly.
  8. Top each toasted slice with the tomato basil mixture. If using, sprinkle crumbled feta cheese on top for added flavor.
  9. Serve immediately as a delightful appetizer or snack.
