Ingredients

  • 4 large fresh tomatoes, sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the mayonnaise, Dijon mustard, garlic powder, salt, and pepper until well combined.
  3. Layer the sliced tomatoes on the pre-baked pie crust, overlapping them slightly.
  4. Spread the mayonnaise mixture evenly over the tomatoes, ensuring even coverage.
  5. Sprinkle the shredded mozzarella and crumbled feta cheese over the top.
  6. Generously sprinkle the chopped basil and parsley across the pie for a pop of color and flavor.
  7. Drizzle a little olive oil over the assembled pie for extra moistness and richness.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the tomatoes are slightly caramelized.
