Ingredients

  • 1 whole fresh pineapple, peeled, cored, and sliced into rings
  • 0.5 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 teaspoon baking powder
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 1 whole egg
  • 0.5 cup sparkling water
  • as needed oil for frying (vegetable or coconut oil)
  • as desired none honey or maple syrup for drizzling
  • as desired none chopped mint for garnish

Instructions

  1. Begin by prepping the pineapple. Cut the fresh pineapple into thick rings (about ½ inch) and make sure to remove the core from each ring using a small round cutter or knife.
  2. In a medium bowl, whisk together the flour, cornstarch, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the egg and add the sparkling water. Mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until a smooth batter forms. The batter should be thick enough to coat the pineapple rings.
  5. Heat about 1 inch of oil in a large skillet over medium heat. To test if the oil is ready, drop a tiny amount of batter into the oil; it should sizzle and bubble up.
  6. Dip each pineapple ring into the batter, making sure it’s fully coated. Carefully place the coated rings into the hot oil, frying in batches to avoid overcrowding.
  7. Fry for about 2-3 minutes on each side or until the rings are golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to absorb excess oil.
  8. Repeat with remaining pineapple rings, adjusting the heat as necessary.
  9. Once all rings are fried, serve warm, drizzled with honey or maple syrup if desired, and garnish with chopped mint for a refreshing touch.
