Ingredients

  • 4 medium-sized potatoes, peeled and diced
  • 1 pound smoked Polish sausage, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • to taste fresh parsley, chopped (for garnish)

Instructions

  1. Begin by bringing a pot of salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes until slightly tender but not fully cooked. Drain and set aside.
  2. In a large frying pan, heat the vegetable oil over medium heat. Add the sliced smoked Polish sausage and cook for 5-7 minutes until it begins to brown and release its flavors.
  3. Add the chopped onion to the pan with the sausage and sauté until the onions are translucent, about 3-4 minutes.
  4. Stir in the minced garlic, paprika, black pepper, and salt, cooking for another minute until fragrant.
  5. Add the parboiled potatoes to the pan, stirring gently to combine with the sausage and onions. Spread them evenly across the pan and allow them to cook undisturbed for about 5 minutes, allowing them to crisp up.
  6. Carefully stir the potatoes and continue to cook for an additional 10-15 minutes, stirring occasionally, until both the potatoes are golden brown and crispy.
  7. Taste and adjust seasoning if necessary. Remove from heat and garnish with freshly chopped parsley before serving.

💡 Chef's Notes

Serve in a large rustic bowl, garnished with extra parsley, and perhaps a side of mustard for dipping on the side. Enjoy hot!
