Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup breadcrumbs
  • 0.5 cup grated parmesan cheese
  • 0.25 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 0.5 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 0.25 cup ketchup
  • 0.25 cup barbecue sauce
  • 0.5 cup cream cheese, softened
  • 0.25 cup sour cream
  • 1 tbsp fresh chives, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, parmesan cheese, chopped onion, minced garlic, egg, milk, Worcestershire sauce, dried thyme, black pepper, and salt. Mix until well combined.
  3. Transfer the meat mixture onto a baking sheet lined with parchment paper and shape it into a loaf, about 2 inches thick.
  4. In a separate bowl, mix the ketchup and barbecue sauce. Spread half of the mixture evenly over the top of the meatloaf.
  5. Place the meatloaf in the preheated oven and bake for about 45 minutes, or until the internal temperature reaches 160°F (70°C).
  6. While the meatloaf is baking, prepare the frosting by mixing the softened cream cheese and sour cream in a bowl until smooth.
  7. Once the meatloaf is cooked, remove it from the oven. Allow it to cool for about 5 minutes before spreading the cream cheese frosting over the top using a spatula.
  8. Drizzle the remaining ketchup and barbecue sauce mixture over the frosted meatloaf for an extra burst of flavor.
  9. Top with chopped fresh chives for an added touch of flavor and color. Slice and serve warm.

Allow the meatloaf to cool slightly before frosting for best results.
