Garden Tomato & Whipped Feta Crostini Delight
Ingredients
- 1 baguette sliced into ½ inch pieces
- 1 cup cherry tomatoes, halved
- 1 cup feta cheese, crumbled
- 0.5 cup cream cheese, softened
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 clove garlic, minced

Instructions
- Prepare the Whipped Feta: In a medium bowl, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, minced garlic, and dried oregano. Use a hand mixer or a food processor to whip the mixture until smooth and creamy. Season with salt and pepper to taste. Set aside.
- Toast the Baguette: Preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil. Bake in the preheated oven for about 5-7 minutes, or until the edges are golden brown and crispy.
- Prepare the Tomato Topping: In a mixing bowl, combine the halved cherry tomatoes with a drizzle of olive oil, salt, and pepper. Toss gently to coat the tomatoes evenly.
- Assemble the Crostini: Once the baguette slices are toasted, remove them from the oven. Spread a generous dollop of whipped feta on each slice. Top with a spoonful of the tomato mixture.
- Garnish and Serve: Finish each crostini with a fresh basil leaf for a pop of color and flavor. Serve immediately while the bread is warm.
