Ingredients

  • 2 pieces lobster tails, split lengthwise
  • 8 large sea scallops
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh parsley, chopped
  • 1 teaspoon paprika
  • to taste salt and pepper
  • as needed lemon wedges for garnish

Instructions

  1. Preheat your grill or oven broiler to medium-high heat.
  2. In a small saucepan over low heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes, until fragrant. Be careful not to burn the garlic.
  3. Stir in the lemon juice, chopped parsley, paprika, salt, and pepper into the melted garlic butter. Remove from heat and set aside.
  4. Place the split lobster tails on a baking sheet, shell side down. Brush generously with the garlic butter mixture, making sure to get some in the meat.
  5. Season the lobster tails with salt and pepper.
  6. For the scallops, pat them dry with a paper towel and season with salt and pepper.
  7. Heat a non-stick skillet over medium-high heat with a drizzle of olive oil. Once hot, add the scallops and sear for about 2-3 minutes on each side, until golden brown and cooked through. Drizzle some garlic butter on top while they are cooking.
  8. Place the lobster tails under the grill or broiler and cook for 8-10 minutes, basting with additional garlic butter halfway through, until the meat is opaque and cooked through.
  9. Remove the lobster tails from the grill and let them sit for a minute.
  10. Plate the lobster tails and scallops together, drizzling any remaining garlic butter over the top.
  11. Serve with lemon wedges on the side for an extra burst of flavor.
