Garlic Butter Shrimp Grilled Cheese Delightful Sandwich
Ingredients
- 8 oz raw shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon fresh parsley, chopped (plus extra for garnish)
- 8 slices sourdough bread
- 4 slices cheddar cheese
- 1 cup baby spinach
- to taste salt and pepper
- optional red pepper flakes for heat
Instructions
- In a skillet, melt 2 tablespoons of butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and season with salt, pepper, and optional red pepper flakes. Cook for about 3-4 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.
- Remove the skillet from heat and stir in the lemon juice and chopped parsley. Set aside the shrimp mixture.
- In another skillet or griddle, heat the remaining 2 tablespoons of butter over medium-low heat.
- Assemble the sandwiches by placing a slice of sourdough bread on the skillet. Top with a slice of cheddar cheese, followed by a handful of baby spinach, the garlic butter shrimp mixture, and another slice of cheddar cheese. Finally, top with another slice of sourdough bread.
- Grill each sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove the grilled cheese sandwiches from the skillet and let them cool for a minute before slicing.
- Garnish with additional chopped parsley and serve immediately.
💡 Chef's Notes
Slice the sandwiches diagonally and serve with a small side of marinara or garlic aioli for dipping. Consider adding a sprinkle of extra parsley on top for a pop of color.
