Ingredients

  • 1.5 lbs sirloin steak, cut into bite-sized cubes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1.5 lbs baby potatoes
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 tablespoons unsalted butter
  • to taste salt and pepper
  • Chives, for garnish

Instructions

  1. Start by placing the baby potatoes in a large pot and covering them with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes or until fork-tender.
  2. While the potatoes are cooking, heat a large skillet over medium-high heat. Season the steak cubes with salt, pepper, and smoked paprika.
  3. Add 2 tablespoons of butter to the skillet. Once melted, add the steak bites in a single layer, cooking for 3-4 minutes on each side until they are browned and cooked to your desired doneness.
  4. Reduce the heat to low and add the minced garlic and the remaining 2 tablespoons of butter. Stir to coat the steak bites and cook for another 1-2 minutes until the garlic is fragrant.
  5. Once the potatoes are done, drain and return them to the pot. Use a potato masher or fork to gently smash each potato.
  6. Stir in the sour cream, shredded cheddar cheese, remaining butter, and salt and pepper to taste. Mix until creamy and the cheese is melted; the potatoes should be slightly chunky.
  7. Plate the cheesy smashed potatoes and arrange the garlic butter steak bites on top. Drizzle any remaining garlic butter from the pan over the steak bites.
  8. Garnish with chopped parsley for the steak and chives for the potatoes.
