Ingredients

  • 1 lb sirloin steak, cut into bite-sized cubes
  • 2 cups baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • to taste fresh parsley, chopped for garnish

Instructions

  1. In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, add the steak bites, season with salt and pepper, and cook for about 3-4 minutes, flipping them until browned on all sides. Remove the steak from the skillet and set aside.
  3. In the same skillet, add 2 tablespoons of butter and let it melt. Add the drained potatoes to the skillet and sauté for about 5-7 minutes until they are golden brown and crispy. Season with salt and pepper.
  4. Reduce the heat to medium-low, add the remaining 2 tablespoons of butter to the skillet, and once melted, stir in the minced garlic, rosemary, and thyme. Cook for 1-2 minutes until fragrant.
  5. Return the steak bites to the skillet and toss them in the garlic butter mixture for about 2 minutes to incorporate all flavors.
  6. Remove from heat and sprinkle with chopped parsley for garnish. Serve hot alongside the crispy potatoes.
