Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • to taste salt and black pepper
  • optional fresh parsley, chopped for garnish

Instructions

  1. Season the steak cubes generously with salt and black pepper. Allow them to sit at room temperature for about 20 minutes for better cooking.
  2. In a large skillet or frying pan, heat 2 tablespoons of butter over medium-high heat until melted and bubbling.
  3. Carefully add the steak cubes to the pan in a single layer without overcrowding. Sear the steak for about 2-3 minutes on one side without moving them to get a nice crust, then flip and sear for another 2-3 minutes until browned. Adjust cooking time slightly based on desired doneness (medium-rare to medium).
  4. Reduce the heat to medium. Push the steak bites to one side of the pan and add the remaining 2 tablespoons of butter to the cleared side. Once melted, add the minced garlic, rosemary, and thyme. Stir the garlic and herbs together, cooking for about a minute until fragrant.
  5. Toss the steak bites in the garlic butter until fully coated, cooking for an additional minute. Taste and adjust seasoning with extra salt and pepper if needed.
  6. Remove the skillet from heat. Transfer the garlic butter steak bites to a serving platter. If desired, sprinkle with fresh chopped parsley for added color and flavor.
