Ingredients

  • 1 lb tenderloin steak, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • for garnish fresh parsley, chopped

Instructions

  1. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Season the steak pieces with salt, pepper, thyme, and smoked paprika.
  2. Add the steak bites to the skillet in a single layer and cook for 2-3 minutes on each side until browned and cooked to your desired doneness. Do not overcrowd the pan; you may need to do this in batches. Once cooked, remove them from the skillet and set them aside.
  3. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant but not burned.
  4. Lower the heat to medium and pour in the heavy cream, stirring constantly. Allow it to simmer for about 2-3 minutes until slightly thickened.
  5. Stir in the grated Parmesan cheese until fully melted and incorporated, then season with a pinch of salt and pepper to taste.
  6. Add the seared steak bites back into the skillet, coating them well with the creamy Parmesan sauce. Cook together for an additional minute to heat the steak through.
  7. Transfer the garlic butter steak bites to a serving platter and drizzle with any remaining sauce. Garnish with freshly chopped parsley.
