Ingredients

  • 3 large sweet potatoes, peeled and diced
  • 4 cloves garlic, minced
  • 0.5 cup unsalted butter
  • 0.5 cup heavy cream (or milk)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • for garnish fresh chives, chopped

Instructions

  1. In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook until fork-tender, approximately 15-20 minutes.
  2. While the sweet potatoes are cooking, melt the butter in a small skillet over medium heat. Add the minced garlic and sauté for about 2-3 minutes until fragrant but not browned.
  3. Once the sweet potatoes are done, drain and return them to the pot.
  4. Add the sautéed garlic and butter mixture, heavy cream (or milk), dried thyme, and rosemary to the pot.
  5. Mash the mixture using a potato masher or an electric mixer until smooth and creamy. Adjust the consistency with more cream or milk if needed.
  6. Season with salt and pepper to taste, and mix well.
  7. Transfer the mashed sweet potatoes to a serving bowl.
  8. Garnish with fresh chopped chives before serving.
