Garlic Herb Mashed Sweet Potatoes Creamy Delight
Ingredients
- 3 large sweet potatoes, peeled and diced
- 4 cloves garlic, minced
- 0.5 cup unsalted butter
- 0.5 cup heavy cream (or milk)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
- for garnish fresh chives, chopped
Instructions
- In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook until fork-tender, approximately 15-20 minutes.
- While the sweet potatoes are cooking, melt the butter in a small skillet over medium heat. Add the minced garlic and sauté for about 2-3 minutes until fragrant but not browned.
- Once the sweet potatoes are done, drain and return them to the pot.
- Add the sautéed garlic and butter mixture, heavy cream (or milk), dried thyme, and rosemary to the pot.
- Mash the mixture using a potato masher or an electric mixer until smooth and creamy. Adjust the consistency with more cream or milk if needed.
- Season with salt and pepper to taste, and mix well.
- Transfer the mashed sweet potatoes to a serving bowl.
- Garnish with fresh chopped chives before serving.
