Ingredients

  • 1 pound large shrimp, deveined and peeled
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon lemon zest
  • to taste salt and pepper
  • for garnish fresh parsley, chopped
  • for serving lemon wedges

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine olive oil, minced garlic, paprika, oregano, thyme, lemon zest, salt, and pepper. Mix well to create a marinade.
  3. Add the shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for about 15-20 minutes at room temperature.
  4. Spread the marinated shrimp in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque. Do not overcook to keep them juicy.
  6. Remove from the oven and sprinkle with chopped parsley.
