Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped fresh parsley
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 large egg
  • 0.25 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 0.5 cup marinara sauce (for serving)
  • fresh basil leaves (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, and chopped onion.
  3. In a separate bowl, whisk together the egg, milk, and olive oil. Pour this mixture into the meat mixture and stir until well combined.
  4. Season the mixture with dried oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  5. Shape the mixture into small, oval-shaped loaves and place them on the prepared baking sheet, leaving some space between each one.
  6. Bake in the preheated oven for 25-30 minutes, or until the meatloaves are cooked through and reach an internal temperature of 165°F (74°C).
  7. Once cooked, remove the meatloaves from the oven and let them rest for a few minutes before serving.
  8. Serve the meatloaves drizzled with marinara sauce and garnish with fresh basil leaves.
