Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 0.25 cup olive oil
  • 4 cloves garlic, minced
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • to taste Fresh parsley, chopped (for garnish)

Instructions

  1. In a mixing bowl, combine the olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, red pepper flakes, salt, and black pepper to create a marinade.
  2. Add the cubed chicken breasts to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat your grill or grill pan over medium heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  4. Thread the marinated chicken onto the skewers, leaving a little space between pieces for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
  6. Once done, remove the skewers from the grill and let them rest for a few minutes.
  7. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra burst of freshness.
