Ingredients

  • 12 oz fettuccine or spaghetti
  • 6 cloves garlic, thinly sliced
  • 0.5 cup extra virgin olive oil
  • 0.25 teaspoon red pepper flakes
  • 1 cup breadcrumbs (preferably homemade)
  • 0.5 cup grated Parmesan cheese (optional for taste)
  • 0.25 cup fresh parsley, finely chopped
  • Salt and pepper to taste
  • 1 lemon lemon zest
  • 1 tablespoon lemon juice

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Sauté for about 3-4 minutes, or until the garlic is golden brown and fragrant.
  3. In a separate pan, toast the breadcrumbs over medium heat with a drizzle of olive oil, stirring frequently until golden brown and crunchy, about 5-7 minutes. Season with a pinch of salt and pepper.
  4. Add the drained pasta to the skillet with the garlic oil. Toss to coat, adding reserved pasta water as needed to create a silky sauce. Stir in lemon juice and zest for freshness, seasoning with salt and pepper to taste.
  5. Gently fold in the toasted breadcrumbs and grated Parmesan cheese (if using) until well combined. Finally, stir in the chopped parsley.
  6. Plate the garlic pasta and garnish with extra parsley and a sprinkle of lemon zest.

💡 Chef's Notes

Serve in shallow bowls with a light drizzle of olive oil and a sprinkle of extra red pepper flakes.
