Ingredients

  • 1 lb salmon fillet, cut into 1-inch cubes
  • 2 tablespoons fresh ginger, grated
  • 3 tablespoons lime juice (about 2 limes)
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon chili flakes (optional)
  • 1 piece bell pepper, cut into 1-inch pieces
  • 1 piece red onion, cut into wedges
  • 1 set wooden or metal skewers for grilling

Instructions

  1. In a bowl, whisk together grated ginger, lime juice, honey, soy sauce, sesame oil, minced garlic, black pepper, and chili flakes (if using) to create a marinade.
  2. Place the salmon cubes in a shallow dish or resealable bag and pour the marinade over the fish. Ensure all pieces are well-coated. Cover and marinate in the refrigerator for 30 minutes to an hour.
  3. Meanwhile, soak wooden skewers in water for 20-30 minutes to prevent burning (skip this step if using metal skewers).
  4. Preheat your grill to medium-high heat.
  5. Assemble the skewers by alternating pieces of marinated salmon, bell pepper, and red onion onto each skewer. Aim for about 4-5 pieces of salmon per skewer.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender and slightly charred.
  7. Remove from the grill and let the skewers rest for a few minutes before serving.
