Ingredients

  • 4 fillets cod (about 6 ounces each)
  • 0.25 cup soy sauce (low sodium recommended)
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon corn starch
  • 0.25 cup water
  • 2 green onions sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a medium bowl, whisk together soy sauce, grated ginger, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and 2 teaspoons of the corn starch. This mixture will be your glaze.
  2. In a small saucepan, pour in the glaze mixture and add the water. Heat over medium heat and bring to a simmer, stirring frequently. Once it begins to simmer, continue cooking for about 3-5 minutes until slightly thickened. Remove from heat.
  3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  4. Place the cod fillets on the prepared baking sheet. Brush each fillet generously with the ginger soy glaze. Reserve some for basting during cooking.
  5. Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C). If you desire a slightly caramelized finish, you can broil for the last 2 minutes, but watch carefully to prevent burning.
  6. Baste the cod with more glaze halfway through the baking process for added flavor.
  7. Once cooked, remove from the oven and let the cod rest for a couple of minutes.
  8. Serve on a plate, drizzling over any remaining ginger soy glaze and sprinkling with sesame seeds and sliced green onions for garnish.

💡 Chef's Notes

For a caramelized finish, broil for the last 2 minutes of cooking.
