Ginger Soy Glazed Cod Flavorful and Simple Recipe
Ingredients
- 4 fillets cod (about 6 ounces each)
- 0.25 cup soy sauce (low sodium recommended)
- 2 tablespoons fresh ginger, grated
- 2 tablespoons honey or maple syrup
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 tablespoon corn starch
- 0.25 cup water
- 2 green onions sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a medium bowl, whisk together soy sauce, grated ginger, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and 2 teaspoons of the corn starch. This mixture will be your glaze.
- In a small saucepan, pour in the glaze mixture and add the water. Heat over medium heat and bring to a simmer, stirring frequently. Once it begins to simmer, continue cooking for about 3-5 minutes until slightly thickened. Remove from heat.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Place the cod fillets on the prepared baking sheet. Brush each fillet generously with the ginger soy glaze. Reserve some for basting during cooking.
- Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C). If you desire a slightly caramelized finish, you can broil for the last 2 minutes, but watch carefully to prevent burning.
- Baste the cod with more glaze halfway through the baking process for added flavor.
- Once cooked, remove from the oven and let the cod rest for a couple of minutes.
- Serve on a plate, drizzling over any remaining ginger soy glaze and sprinkling with sesame seeds and sliced green onions for garnish.
