Ingredients

  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 cup molasses
  • 1 cup hot water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
  4. Beat in the egg until fully combined. Then, mix in the molasses and vanilla extract.
  5. Gradually add the dry flour mixture to the wet ingredients, alternating with the hot water. Start and finish with the flour mixture. Mix until just combined; do not overmix.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
