Gingerbread Energy Bites Tasty and Easy Snack Recipe
Ingredients
- 1 cup rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/4 cup molasses
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup crushed ginger snap cookies
- 1/4 cup mini dark chocolate chips (optional)
- 1 pinch sea salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and molasses. Mix until well combined.
- Add the ground ginger, cinnamon, nutmeg, cloves, and sea salt to the mixture and stir until all the spices are evenly distributed.
- Fold in the crushed ginger snap cookies and mini chocolate chips, if using. Mix until the ingredients are evenly distributed throughout the mixture.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter. Place the energy bites on a parchment-lined baking sheet.
- Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to firm up.
- After chilling, transfer the energy bites to an airtight container for storage. They can be kept in the refrigerator for up to a week.
