Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup molasses
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup crushed ginger snap cookies
  • 1/4 cup mini dark chocolate chips (optional)
  • 1 pinch sea salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and molasses. Mix until well combined.
  2. Add the ground ginger, cinnamon, nutmeg, cloves, and sea salt to the mixture and stir until all the spices are evenly distributed.
  3. Fold in the crushed ginger snap cookies and mini chocolate chips, if using. Mix until the ingredients are evenly distributed throughout the mixture.
  4. Using your hands, roll the mixture into small balls, about 1 inch in diameter. Place the energy bites on a parchment-lined baking sheet.
  5. Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to firm up.
  6. After chilling, transfer the energy bites to an airtight container for storage. They can be kept in the refrigerator for up to a week.
