Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.5 cup granulated sugar
  • 2 large apples, peeled and diced (preferably Granny Smith)
  • 0.5 cup whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.25 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • as needed oil for frying

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and granulated sugar until well combined.
  2. In another bowl, mix together the milk, egg, vanilla extract, and melted butter. Stir until fully combined.
  3. Pour the wet ingredients into the dry ingredients and stir using a spatula until just combined. Do not overmix. Carefully fold in the diced apples.
  4. Heat about 2 inches of oil in a deep pan or fryer to 350°F (175°C).
  5. Using a small spoon or cookie scoop, drop batter by tablespoons into the hot oil. Fry for about 3-4 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan.
  6. Once cooked, remove the fritter bites from the oil and place them on a paper towel-lined plate to absorb excess oil.
  7. In a separate bowl, whisk together the powdered sugar and milk until smooth to create the glaze. Adjust with more milk or sugar to achieve desired consistency.
  8. Dip each fritter bite into the glaze or drizzle it over the top for an even coating.
  9. Let the glazed fritter bites sit for a few minutes for the glaze to set before serving.
