Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon cinnamon
- 0.25 teaspoon nutmeg
- 0.5 cup granulated sugar
- 2 large apples, peeled and diced (preferably Granny Smith)
- 0.5 cup whole milk
- 1 large egg
- 1 teaspoon vanilla extract
- 0.25 cup unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk (for glaze)
- as needed oil for frying
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and granulated sugar until well combined.
- In another bowl, mix together the milk, egg, vanilla extract, and melted butter. Stir until fully combined.
- Pour the wet ingredients into the dry ingredients and stir using a spatula until just combined. Do not overmix. Carefully fold in the diced apples.
- Heat about 2 inches of oil in a deep pan or fryer to 350°F (175°C).
- Using a small spoon or cookie scoop, drop batter by tablespoons into the hot oil. Fry for about 3-4 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan.
- Once cooked, remove the fritter bites from the oil and place them on a paper towel-lined plate to absorb excess oil.
- In a separate bowl, whisk together the powdered sugar and milk until smooth to create the glaze. Adjust with more milk or sugar to achieve desired consistency.
- Dip each fritter bite into the glaze or drizzle it over the top for an even coating.
- Let the glazed fritter bites sit for a few minutes for the glaze to set before serving.
