Glazed Lemon Sugar Cookies Delightful and Zesty Treat
Ingredients
- 2.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1.5 cups powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon milk (or plant-based milk)

Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy (about 3-4 minutes).
- Beat in the eggs, lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers will look slightly underbaked but will set as they cool.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies cool, prepare the glaze. In a medium bowl, combine powdered sugar, lemon juice, milk, and a pinch of salt, whisking until smooth and glossy.
- Once the cookies are completely cool, drizzle the glaze over the tops using a fork or spoon. Allow the glaze to set for about 30 minutes before serving.
