Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1.5 cups powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon milk (or plant-based milk)
  • a pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy (about 3-4 minutes).
  4. Beat in the eggs, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers will look slightly underbaked but will set as they cool.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. While the cookies cool, prepare the glaze. In a medium bowl, combine powdered sugar, lemon juice, milk, and a pinch of salt, whisking until smooth and glossy.
  10. Once the cookies are completely cool, drizzle the glaze over the tops using a fork or spoon. Allow the glaze to set for about 30 minutes before serving.
