Ingredients
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 2 cups rolled oats
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup chopped nuts (walnuts or pecans)
- 1 cup shredded coconut (unsweetened)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
- Add the vanilla extract and mix well.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the butter-sugar mixture, stirring until combined.
- Fold in the rolled oats, chopped nuts, shredded coconut, and chocolate chips, if using. Mix until well-distributed.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving enough space between them as they will spread.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
