Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 2 cups rolled oats
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (walnuts or pecans)
  • 1 cup shredded coconut (unsweetened)
  • 0.5 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the butter-sugar mixture, stirring until combined.
  5. Fold in the rolled oats, chopped nuts, shredded coconut, and chocolate chips, if using. Mix until well-distributed.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving enough space between them as they will spread.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  8. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Arrange the cooled cookies on a decorative platter and sprinkle a bit of powdered sugar on top for a touch of elegance. You can also serve them alongside a glass of milk or a cup of tea for a cozy treat.
