Greek Yogurt Banana Bread Soft and Flavorful Delight
Ingredients
- 3 pieces ripe bananas, mashed
- 1 cup Greek yogurt (plain, unsweetened)
- 1 cup honey or maple syrup
- 0.25 cup vegetable oil or melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 teaspoon cinnamon
- 0.5 cup walnuts or pecans (optional)
- 0.5 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.
- In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey (or maple syrup), vegetable oil, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to over mix.
- If using, fold in the walnuts or pecans and chocolate chips.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
