Greek Yogurt Chicken Salad Lettuce Wraps Delight
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup plain Greek yogurt
- 0.5 cup celery, finely chopped
- 0.5 cup red grapes, halved
- 0.25 cup walnuts, roughly chopped
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 unit Juice of 1 lemon
- to taste unit Salt and pepper
- 8 large leaves lettuce (such as romaine or butter lettuce)
Instructions
- In a large mixing bowl, combine the shredded chicken and Greek yogurt, mixing well to combine.
- Add the chopped celery, halved grapes, and walnuts to the bowl, stirring gently.
- In a separate small bowl, whisk together the Dijon mustard, honey, fresh dill, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and stir gently until all ingredients are well coated.
- Lay out the lettuce leaves on a serving platter.
- Spoon the chicken salad mixture evenly into each lettuce leaf, forming wraps.
- Optionally, garnish with extra dill or a few walnuts on top for added crunch.
