Grilled Cheese Delight with Spicy Tomato Jam: A Flavorful Twist on a Classic
Ingredients
- 4 slices sourdough bread
- 4 slices sharp cheddar cheese
- 2 tablespoons unsalted butter
- 1 4 cup mayonnaise
- 1 2 cup canned crushed tomatoes
- 1 tablespoon brown sugar
- 1 teaspoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 2 teaspoon crushed red pepper flakes

- 0 to taste pepper
Instructions
- In a small saucepan over medium heat, combine the crushed tomatoes, brown sugar, apple cider vinegar, smoked paprika, and crushed red pepper flakes. Season with salt and pepper. Stir gently and let it simmer for about 10-12 minutes until it thickens slightly. Set aside to cool.
- In a small bowl, mix the mayonnaise with a pinch of salt and pepper. Spread a generous amount of the mayo mixture on one side of each slice of sourdough bread.
- Heat a skillet or griddle over medium heat. Place two slices of the sourdough bread mayo-side down in the skillet. Layer two slices of cheese on each slice of bread.
- Place the remaining slices of sourdough bread on top of the cheese, mayo-side up. Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwiches and cook for another 3-4 minutes until the cheese is melted and the other side is golden.
- Remove the sandwiches from the pan and let them rest for a minute. Cut them diagonally and serve warm with the spicy tomato jam on the side for dipping.
