Ingredients

  • 4 slices sourdough bread
  • 6 ounces aged Gouda cheese, sliced
  • 1 cup mushrooms (such as cremini or shiitake), sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • optional fresh thyme leaves, for garnish

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 10 minutes, stirring occasionally. Add the sliced mushrooms, season with salt and pepper, and cook until the mushrooms are golden and tender, around 5-7 minutes. Remove from heat and set aside.
  2. Lay out the slices of sourdough bread. On two slices, layer the sliced Gouda cheese generously. Top with the sautéed mushrooms and onions, and then add another layer of Gouda cheese on top. Finish with the remaining sourdough slices to complete the sandwiches.
  3. In the same skillet used for the mushrooms, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium heat. Place the assembled sandwiches in the skillet and grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted. If desired, press down lightly with a spatula to give it a nice crisp.
  4. Once done, remove the grilled cheese from the skillet. Let it rest for a minute before slicing it in half. Optionally, garnish with fresh thyme leaves for added flavor and presentation.
