Ingredients

  • 2 medium potatoes, sliced thin
  • 2 medium carrots, sliced
  • 1 bell pepper diced (any color)
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey (or plant-based substitute)
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnish fresh parsley, chopped

Instructions

  1. Prepare the Foil: Cut four large sheets of aluminum foil (about 12x12 inches each) and lay them flat on a clean surface.
  2. Mix Ingredients: In a mixing bowl, combine the ground beef (or turkey), sliced potatoes, carrots, bell pepper, onion, garlic, smoked paprika, Italian seasoning, olive oil, salt, and pepper. Mix thoroughly until everything is well combined.
  3. Assemble Packets: Place a portion of the mixture in the center of each foil sheet, forming a mound. Fold the sides of the foil over the mixture, then seal the top by folding over and crimping securely to prevent leaks.
  4. Preheat Grill: Preheat your grill to medium-high heat (about 375°F / 190°C).
  5. Grill Packets: Place the foil packets directly on the grill grates. Grill for about 25-30 minutes, turning occasionally to ensure even cooking. The food is done when the meat is cooked through and the vegetables are tender.
  6. Serve: Carefully remove the packets from the grill (they will be hot!). Open with caution to avoid steam.
  7. Garnish: Serve the hobo dinners on plates and garnish with fresh chopped parsley for a pop of color.
