Grilled Peach Crostini Flavorful Summer Appetizer
Ingredients
- 4 pieces ripe peaches, halved and pitted
- 1 tablespoon olive oil
- to taste salt and pepper
- 1 baguette sliced into 1/2-inch thick pieces
- 1 cup ricotta cheese
- 2 tablespoons honey
- for garnish fresh mint leaves
- for drizzling balsamic glaze
Instructions
- Preheat your grill to medium heat.
- Brush the peach halves with olive oil and sprinkle with a pinch of salt and pepper. Place them cut side down on the grill. Grill for about 4-5 minutes until they have nice grill marks and are slightly softened. Remove from the grill and let cool slightly.
- While the peaches are grilling, brush the baguette slices with a little olive oil on both sides. Place the slices on the grill and toast for about 2-3 minutes, flipping halfway through, until golden and crisp.
- In a small bowl, mix the ricotta cheese with honey until well combined and creamy.
- To assemble, spread a generous tablespoon of the honey-ricotta mixture on each grilled baguette slice.
- Slice the grilled peaches into thin wedges and place them atop the ricotta-covered crostini.
- Drizzle with balsamic glaze for a touch of sweetness and acidity.
- Garnish with fresh mint leaves for a burst of color and flavor.
