Ingredients

  • 4 pieces ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 baguette sliced into 1/2-inch thick pieces
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • for garnish fresh mint leaves
  • for drizzling balsamic glaze

Instructions

  1. Preheat your grill to medium heat.
  2. Brush the peach halves with olive oil and sprinkle with a pinch of salt and pepper. Place them cut side down on the grill. Grill for about 4-5 minutes until they have nice grill marks and are slightly softened. Remove from the grill and let cool slightly.
  3. While the peaches are grilling, brush the baguette slices with a little olive oil on both sides. Place the slices on the grill and toast for about 2-3 minutes, flipping halfway through, until golden and crisp.
  4. In a small bowl, mix the ricotta cheese with honey until well combined and creamy.
  5. To assemble, spread a generous tablespoon of the honey-ricotta mixture on each grilled baguette slice.
  6. Slice the grilled peaches into thin wedges and place them atop the ricotta-covered crostini.
  7. Drizzle with balsamic glaze for a touch of sweetness and acidity.
  8. Garnish with fresh mint leaves for a burst of color and flavor.
  9. Serve immediately and enjoy!
