Ingredients

  • 1 cup whole wheat flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup honey or maple syrup
  • 0.33 cup unsweetened applesauce
  • 0.25 cup almond milk
  • 1 teaspoon vanilla extract
  • 0.5 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it lightly.
  2. In a medium mixing bowl, combine the whole wheat flour, cocoa powder, baking soda, baking powder, and salt. Whisk together until well blended.
  3. In a separate large bowl, mix together the honey (or maple syrup), applesauce, almond milk, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be cautious not to over-mix.
  5. Fold in the dark chocolate chips, reserving a few for sprinkling on top if desired.
  6. Spoon the batter into the mini muffin tin, filling each cup about 2/3 full. Top with the reserved chocolate chips if using.
  7. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the mini muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
