Hearty Ham Bone Soup with Potatoes and Cabbage Nourishing
Ingredients
- 1 large ham bone with meat attached
- 4 cups low-sodium chicken broth
- 2 large potatoes, diced
- 2 cups green cabbage, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 ribs celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 2 leaves bay leaves

Instructions
- In a large stock pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, sliced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.
- Pour in the chicken broth and add the ham bone, dried thyme, black pepper, and bay leaves. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and allow the soup to simmer for about 30 minutes. This will allow all the delicious flavors from the ham bone to infuse into the broth.
- After 30 minutes, add the diced potatoes and chopped cabbage to the pot. Continue to simmer for another 20-25 minutes, or until the potatoes are tender and the cabbage is cooked down.
- Carefully remove the ham bone from the soup. Allow it to cool slightly before shredding the ham from the bone. Discard the bone and any excess fat. Return the shredded ham to the pot.
- Stir the soup well and taste. Add salt if needed and remove the bay leaves. Let the soup simmer for another 5 minutes to combine flavors.
- Ladle the hearty ham bone soup into bowls, garnishing each bowl with freshly chopped parsley for a burst of color and freshness.
