Hearty Sausage and Biscuit Casserole Delightful Meal
Ingredients
- 1 pound Italian sausage (mild or spicy, as preferred)
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper diced (any color)
- 2 cups fresh spinach, chopped
- 8 large eggs
- 1 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 2 cans refrigerated biscuit dough (16.3 oz each)
- 1 cup shredded cheddar cheese
- 1 2 grated Parmesan cheese
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes.
- Add the diced onion and bell pepper to the skillet, sautéing until tender, about 3-4 minutes. Stir in the chopped spinach and cook until wilted, about 1-2 minutes. Remove from heat.
- In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
- Open the biscuit dough and cut each biscuit into quarters. Gently fold the biscuit pieces into the egg mixture, along with the cooked sausage and vegetable mixture.
- Pour the entire mixture into the prepared baking dish, spreading it out evenly.
- Sprinkle the shredded cheddar cheese and grated Parmesan on top of the casserole.
- Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the biscuit pieces are golden brown.
- Allow to cool for a few minutes before slicing and serving. Enjoy!
