Ingredients

  • 1 pound Italian sausage (mild or spicy, as preferred)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper diced (any color)
  • 2 cups fresh spinach, chopped
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 2 cans refrigerated biscuit dough (16.3 oz each)
  • 1 cup shredded cheddar cheese
  • 1 2 grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes.
  3. Add the diced onion and bell pepper to the skillet, sautéing until tender, about 3-4 minutes. Stir in the chopped spinach and cook until wilted, about 1-2 minutes. Remove from heat.
  4. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  5. Open the biscuit dough and cut each biscuit into quarters. Gently fold the biscuit pieces into the egg mixture, along with the cooked sausage and vegetable mixture.
  6. Pour the entire mixture into the prepared baking dish, spreading it out evenly.
  7. Sprinkle the shredded cheddar cheese and grated Parmesan on top of the casserole.
  8. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the biscuit pieces are golden brown.
  9. Allow to cool for a few minutes before slicing and serving. Enjoy!

💡 Chef's Notes

Serve warm, garnished with fresh parsley or chives. Optionally, add a dollop of hot sauce on the side.
