Herb Butter Beef Tenderloin Roast To Impress Guests
Ingredients
- 2.5 lbs beef tenderloin roast
- 0.5 cup unsalted butter, softened
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh herbs for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium bowl, mix the softened butter with minced garlic, rosemary, thyme, parsley, salt, and black pepper until well combined.
- Pat the beef tenderloin dry with paper towels. Rub the olive oil all over the roast and then generously coat it with the herb butter mixture, ensuring it's fully covered.
- In a large oven-safe skillet over medium-high heat, sear the beef tenderloin for about 4-5 minutes on each side until browned.
- Transfer the skillet to the preheated oven and roast for about 25-30 minutes for medium-rare, or until a meat thermometer reads 130°F (54°C).
- Remove the skillet from the oven and transfer the roast to a cutting board. Cover it loosely with aluminum foil and let it rest for at least 10-15 minutes.
- After resting, slice the beef tenderloin into medallions. Serve warm, garnished with fresh herbs and any remaining herb butter drizzled over the top.
