Ingredients

  • 2.5 lbs beef tenderloin roast
  • 0.5 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, mix the softened butter with minced garlic, rosemary, thyme, parsley, salt, and black pepper until well combined.
  3. Pat the beef tenderloin dry with paper towels. Rub the olive oil all over the roast and then generously coat it with the herb butter mixture, ensuring it's fully covered.
  4. In a large oven-safe skillet over medium-high heat, sear the beef tenderloin for about 4-5 minutes on each side until browned.
  5. Transfer the skillet to the preheated oven and roast for about 25-30 minutes for medium-rare, or until a meat thermometer reads 130°F (54°C).
  6. Remove the skillet from the oven and transfer the roast to a cutting board. Cover it loosely with aluminum foil and let it rest for at least 10-15 minutes.
  7. After resting, slice the beef tenderloin into medallions. Serve warm, garnished with fresh herbs and any remaining herb butter drizzled over the top.
