Ingredients

  • 1 cup creamy peanut butter
  • 1 4 cup unsalted butter, softened
  • 1 2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups milk chocolate chips
  • 2 tablespoons coconut oil
  • a pinch sea salt

Instructions

  1. In a large mixing bowl, combine the creamy peanut butter and softened butter. Mix until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and a thick paste forms.
  3. Place the peanut butter mixture in the refrigerator for about 30 minutes to firm it up.
  4. After chilling, use your hands to scoop out small portions of the mixture and shape them into egg-like molds (about 1.5 inches long). Place the formed eggs onto a parchment-lined baking sheet.
  5. In a microwave-safe bowl, melt the milk chocolate chips with the coconut oil in 30-second intervals, stirring in between, until smooth and fully melted.
  6. Dip each peanut butter egg in the melted chocolate, allowing any excess chocolate to drip off, and return them to the lined baking sheet.
  7. Once all eggs are coated, place the tray in the refrigerator for an additional 30 minutes to allow the chocolate to set.
  8. Once set, remove the eggs and lightly sprinkle a pinch of sea salt on top of each for an extra flavor kick.
