Ingredients

  • 1 cup water
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • Oil for frying

Instructions

  1. In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and butter. Bring the mixture to a boil over medium heat.
  2. Once boiling, add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan (around 1-2 minutes).
  3. Remove from heat and let cool slightly (about 5 minutes).
  4. Once cooled, add the eggs one at a time, mixing well after each addition until fully incorporated. Mix in the vanilla extract until smooth.
  5. Transfer the churro dough to a piping bag fitted with a star tip.
  6. In a deep skillet or pot, heat 2 inches of oil over medium heat until hot (approximately 350°F or 175°C).
  7. Pipe 6-inch long strips of dough into the hot oil, cutting them with scissors. Fry in batches until they’re golden brown, about 2-3 minutes per side.
  8. Remove churros with a slotted spoon and drain on paper towels.
  9. In a shallow bowl, mix 1/4 cup sugar and 1 tablespoon cinnamon together. Roll each churro in the cinnamon sugar mixture while they’re still warm.
