- 0.5 cup breadcrumbs (preferably Italian seasoned)
- 0.25 cup grated Parmesan cheese
- 0.25 cup fresh parsley, chopped
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 2 cups marinara sauce (store-bought or homemade)
- 4 sub rolls sub rolls
- 1 cup shredded mozzarella cheese
- to taste none Olive oil (for drizzling)
- optional none sliced jalapeños or banana peppers for spice
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, oregano, onion powder, salt, and black pepper. Mix until all ingredients are evenly incorporated.
- Form the mixture into golf ball-sized meatballs (about 1-1.5 inches in diameter).
- Place the meatballs on a baking sheet lined with parchment paper. Drizzle lightly with olive oil.
- Bake the meatballs in the preheated oven for 18-20 minutes or until cooked through and golden brown.
- While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat. Once heated, gently add the baked meatballs to the sauce and let them simmer for a few minutes.
- Slice the sub rolls lengthwise, but don’t cut all the way through. Lightly toast them in the oven for about 2-3 minutes.
- To assemble, place 3-4 meatballs in each toasted sub roll and generously spoon marinara sauce on top.
- Sprinkle shredded mozzarella cheese over the meatballs and return the subs to the oven for an additional 5 minutes, or until the cheese is bubbly and golden.
- Remove from oven and if you desire extra heat, add sliced jalapeños or banana peppers.
💡 Chef's Notes
Cut the subs diagonally in half and serve on a platter lined with parchment paper. Garnish with extra parsley for a pop of color. Enjoy with a side of crunchy chips or a simple garden salad!
