Ingredients

  • 1 pound ground beef (or a mix of ground beef and pork)
  • 0.5 cup breadcrumbs (preferably Italian seasoned)
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup fresh parsley, chopped
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups marinara sauce (store-bought or homemade)
  • 4 sub rolls sub rolls
  • 1 cup shredded mozzarella cheese
  • to taste none Olive oil (for drizzling)
  • optional none sliced jalapeños or banana peppers for spice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, oregano, onion powder, salt, and black pepper. Mix until all ingredients are evenly incorporated.
  3. Form the mixture into golf ball-sized meatballs (about 1-1.5 inches in diameter).
  4. Place the meatballs on a baking sheet lined with parchment paper. Drizzle lightly with olive oil.
  5. Bake the meatballs in the preheated oven for 18-20 minutes or until cooked through and golden brown.
  6. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat. Once heated, gently add the baked meatballs to the sauce and let them simmer for a few minutes.
  7. Slice the sub rolls lengthwise, but don’t cut all the way through. Lightly toast them in the oven for about 2-3 minutes.
  8. To assemble, place 3-4 meatballs in each toasted sub roll and generously spoon marinara sauce on top.
  9. Sprinkle shredded mozzarella cheese over the meatballs and return the subs to the oven for an additional 5 minutes, or until the cheese is bubbly and golden.
  10. Remove from oven and if you desire extra heat, add sliced jalapeños or banana peppers.

💡 Chef's Notes

Cut the subs diagonally in half and serve on a platter lined with parchment paper. Garnish with extra parsley for a pop of color. Enjoy with a side of crunchy chips or a simple garden salad!
